Ingredients
  • 1 cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsweetened applesauce
  • ½ cup fat-free buttermilk
  • 1 large egg, plus 2 egg whites
  • 1 tsp vanilla extract
  • ½ cup strong brewed coffee, cooled
  • Frosting:
  • 4 oz reduced-fat cream cheese, softened
  • 2 tbsp cocoa powder
  • 2 tbsp powdered sugar
  • Splash of vanilla extract
  • Fresh strawberries or raspberries, to finish
Instructions
  1. Preheat oven to 350°F. Coat an 8-inch round cake pan with nonstick spray and line the bottom with parchment.
  2. Whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt in a large bowl.
  3. In a separate bowl, whisk the applesauce, buttermilk, egg and egg whites, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and whisk to combine. Slowly whisk in the cooled coffee (the batter will be thin, that’s correct).
  5. Pour into the prepared pan and bake 25–28 minutes, until a toothpick inserted in the center comes out clean. Cool completely in the pan.
  6. Beat the cream cheese, cocoa powder, and powdered sugar together until smooth, then stir in the vanilla. Spread over the cooled cake.
  7. Top with fresh berries and a light dusting of powdered sugar just before serving.
Devin’s tip: brewed coffee doesn’t make the cake taste like coffee, it just makes the chocolate taste like more chocolate. Don’t skip it.
